You can make these zucchini and carrot pancakes in less than 15 minutes. This is a cheap idea for a dinner that will not cause you any difficulties. These are fit pancakes consisting mainly of zucchini and carrots, and fried in a small amount of oil. If you want to reduce the fat completely, you can bake them in the oven (bake for about 20 minutes at 180 degrees).
How to prepare…
Ingredients:
1 larger zucchini
1 larger carrot
2 eggs
2 tablespoons of flour, e.g. wheat, spelt or whole wheat
1 teaspoon chopped parsley
2 level tablespoons of breadcrumbs
2 cloves of garlic
1/3 level teaspoon salt
pinch of pepper
The ingredients for fit zucchini and carrot pancakes will be mixed together in a bowl with a fork or spoon. Grate the carrot (larger piece) and zucchini (larger piece) on a coarser grater. Put it in a bowl with eggs (2 large pieces), flour (2 flat tablespoons), breadcrumbs (2 flat tablespoons), parsley (1 teaspoon). We also add pressed garlic (2 cloves), 1/3 flat teaspoon of salt, and a pinch of pepper.
Mix everything for a while until the ingredients combine. Optionally, you can add grated mozzarella (1-2 flat tablespoons). Heat up the pan. Pour 2-3 tablespoons of oil and after a while put a larger tablespoon of the mixture (trying to form a fairly round shape of the pancakes). Fry fit zucchini pancakes and carrots on both sides until golden brown. Enjoy your meal!
