This time I have a recipe for you for a little something… Skyrnik with only five ingredients! Optionally, you can add fruit on top (in my case, a handful of raspberries) and almond flakes. It comes out light, slightly foamy, not too sweet, but just right!
What do we eat…
Skyrnik with raspberries is a dessert for a small loaf pan. Sometimes there are situations when you crave something sweet, but you don’t necessarily want to bake a huge cake that you will later eat on your own for a week… In such situations, such a skyrnik will be a great option!
You won’t even need a mixer to prepare it! Mix everything just until combined with a whisk, put it into a mold and into the oven. Be sure to try it out!
How to prepare…
Ingredients:
Skyrnik:
3 eggs
700 g skyr, e.g. vanilla
2 tablespoons xylitol or erythritol or white sugar
40 g vanilla pudding
a few round biscuits
Additionally:
a handful of raspberries or blueberries (fresh or frozen)
1 tablespoon almond flakes
Add the ingredients at room temperature to the bowl – 700 g of vanilla skyr, 3 eggs, loose vanilla pudding (40 g), and sweetener (2 tablespoons of e.g. white sugar, xylitol, erythritol). Mix everything with a whisk until the ingredients combine. At the bottom of the mold (in my case, a 10 x 22 cm loaf pan) put baking paper and round sponge cakes (I put them quite tightly next to each other, so they won’t float to the top).
If you want, you can replace them with oblong sponge cakes like for tiramisu. I don’t recommend biscuits, because the mass is quite watery and they can float on top of the skyrnik during baking. Gently pour the mass over the biscuits. Place raspberries on top (they can be both fresh and frozen) and sprinkle with a little almond flakes. Bake for 40 minutes at 170 degrees (top and bottom, no hot air). After this time, cool down with the oven door slightly open for at least 15-20 minutes.
