A salad with avocado, grilled chicken in panko and halloumi with a slightly sweet sauce is an idea for a tasty lunch or dinner. Modestly speaking, I think it’s one of the best salads I’ve eaten recently.
How to prepare…
Ingredients:
mix of lettuce with arugula (small package)
100 g Halloumi cheese
1 avocado
1 small chicken breast
3-4 tablespoons panko breading or breadcrumbs
a larger pinch of chicken seasoning
1 egg
2 tablespoons of wheat flour
a few green olives
2 tablespoons chopped sun-dried tomatoes
2 teaspoons chopped peanuts or pine trees
Sauce:
4 tablespoons olive oil
a few drops of lemon juice
1 teaspoon honey mustard
1 teaspoon liquid honey
a small clove of garlic
a small pinch of salt and pepper
The recipe makes two large portions of salad – (for two people). We start by preparing the grilled chicken in panko coating (you can replace it with regular breadcrumbs). Sprinkle the chicken fillet breast evenly with chicken seasoning. Pour the flour into one bowl, crack the egg into the other, beat it with a fork. In turn, pour the panko breadcrumbs into the third one. Dip the chicken first in flour, then in the egg and breadcrumbs. Fry on both sides in hot oil, over medium heat, until the meat is not raw (it took me about 2 minutes on each side). Remove from the pan. When it cools down a bit, cut into slices.
Cut the halloumi cheese into larger cubes and grill in a pan (with a little oil). Prepare the dressing for the avocado salad. In a bowl, mix olive oil (4 tablespoons), a few drops of lemon juice, honey mustard (a teaspoon), honey (a teaspoon), a small clove of garlic pressed through a press, and a small pinch of salt and pepper. We prepare two deeper plates. Put 2-3 larger handfuls of lettuce on the bottom (I used a mix of lettuce with arugula). Then place the chicken slices on one side and the avocado sliced on the other. In the middle I put halloumi cheese, chopped sun-dried tomatoes, a few green olives, and finely chopped nuts (you can toast them a bit in a dry pan beforehand). Pour the sauce over the whole thing. Ready!
